Don't know where she spent those 5 years before she got you, but it sounds like fear. She may think she has to protect you either for yourself or for her. A very basic obedience class would help this greatly. Help,her learn you are in charge of the protection and her and give her the comfidence that she may need.
Clearly, she loves you and is a sweety! She may have had a bad experience with other dogs.
