Sad Recurrent pancreatitis in diabetic dog

My sweet 7 yo Prince was diagnosed with diabetes this summer and the vet thinks it is from frequent bouts of pancreatitis. His blood sugar is all over the place requiring a few hospitalizations. If he doesn't eat in the morning, I can't give him his insulin and I am anxious about that. Then I'm gone all day. If he doesn't eat well at night, he also can't get his insulin. He sometimes is great one day, eating well, playing, etc and the next day he's acting like he doesn't feel well and won't eat. I think the vet is also tiring of seeing us so often! He's on Science Diet ID and doesn't get treats, table food etc. So sad, frustrating, exhausting to see him not feeling well and unsure what to do. (He also has frequent diarrhea with these episodes). Vet bills are also adding up. Any advice??
