Pancreatitis is a very serious illness and it can become life threatening. It's best to follow your vet's strict advice. I would not feed brown rice (I would use white). I would not use applesauce.
My dog Barney was 5 when he had an episode of pancreatitis. He was fine for 5 years after when he had it a second time. At age 10, he was placed on a very low fat diet (home cooked) and has been on that diet now for five years (he's turning 15 next month). Diet is extremely important but it's not the only issue with pancreatitis.
