That would be a very interesting test to do. If you are able to fund it, let us know the results, and whether they are in line with what you already know. I think that enough of us in Yorkietalk would be willing to chip in to a gofundme to make it happen.
From what I've read about food allergies and sensitivities, the most important place to measure the antibodies is in the lining of the digestive tract. Since it would be very invasive to measure them in the intestinal mucosa, the next best place to measure them is in the mouth, by using saliva. It's a brilliant idea, but the published data are very sparse, and mostly involve food sensitivities in humans, not dogs. Saliva testing for food sensitivities hasn't been proven yet using controlled studies. They do know, however, as you pointed out, that blood serum antibody testing DOESN'T work for food allergies and sensitivities. So to answer your question, no, you're not missing anything.
