I have never experienced a dog food high enough in fat content to cause pancreatitis. Are you sure no one is sneaking table scraps, chicken skin, lunchmeat, peanut butter, bacon, etc.? It might be that your dog is overweight which might be a cause of pancreatitis so the vet is trying to get him back to a good weight. If this is the case make sure you add an exercise program too get the weight off quicker.
