My first thought is not a problem with onion, but possible pancreatitis. He has had vomiting too many times IMO for you to wait until Monday. Pancreatitis can turn bad quickly and can kill them.
It may not be that but it sounds like he needs to be seen and evaluated today. As far the the gums, what you really need to test is how they feel. If you lift his lip and touch his gum, it should be wet to the touch. If it is dry and sticky feeling, he may be dehydrating.
If I were you, I would go to an emergency clinic and at least let them examine him....maybe do just basic blood work if they feel it is needed. He may need IV fluids. Yes, it can cost a bit, but if you let it go it could get much worse and in turn more expensive. Perhaps some medication will turn him around.
