My cat does this so he is never left unattended in any room and has to be locked away when we are out. It is dangerous, not only for the animal, but also because your house could burn down!

The only thing I have found that works is constant supervision and removal from the area when supervision can't be achieved. Also, of course, correction if you witness the behavior.

With respect to correction, you may find it works if you scold and then redirect attention to a proper chewy toy.

As a last resort, you can buy covers for wires which are indestructible to dog/cat teeth. This may help for wires which can't be put out of reach for whatever reason. I don't know how much they cost or where you get them from so an internet search may help you more. I was going to look into it when I was told about it by a co-worker but, luckily, my yorkie never developed a taste for wires.
