I am guessing it could be pain. Perhaps she has a joint, or arthritis, that through the course of the night becomes painful from laying in one position too long causing her to wake agitated, or some other form of pain. What a shame they won't take her to be evaluated. Could be as simple as some simple pain meds to help her through this stage of her life.
