My guess is that this is normal transitional stress going on. When dogs transition like this, often they drink less, pee less, eat less, poop less...all of that. I'd just keep a close eye like you're already wonderfully doing and assess in a couple weeks. That said, you do want to always take a new doggie into your vet asap just to get her checked out...so a vet visit won't hurt.
