Default Pottys in crate when we leave...

Well, I feel like each week I am posting or commenting on a new potty problem. These fur babies really are hard to potty train! And to those of you who have succeeded I am envious! I thought we were doing pretty good...we crate trained (4yr old rescue) and she could be left for a few hours and would just sleep. She sleeps through the night in our bed, and she goes potty outside but was having accidents sometimes if I left the room (sneaky little bugger), so we just took it in stride, and started back at square one. We really monitored her, didn't let her out of our sight...and made sure if we were not in the house she was in her crate. We fed and took her out on a stick schedule. We were doing well, each day making progress, sometimes going days with out an accident. Well, yesterday she started peeing and pooping in her crate while I was out. And when I got back she needed to be washed, because its everywhere. Poop stuck in her paws. Here is the thing, she like her crate, she will go in and play with a bully stick or nap in there freely. And I don't leave her closed in it much at all - I work from home so a closed crate is only for errands or dinner out, etc. Is this separation anxiety? I happened to have to run 3 quick but separate errands today...and I in turn ended up having to give her three partial baths... and three loads of laundry to wash the bedding. She is such a sweetie, and this is the only thing that just drives me nuts. What can I do? We have tried puppy pads and she ignores them. And I know she can hold it, she lasts all night no prob. Its like she does it because she's mad I am not with her. I leave the lights and TV on...more ideas please!
