I believe the priest being the coward that he is refused entry to the church when members of his flock were being attacked by zombies. How can anyone stand by and not help if they can?

I didn't notice it, but you're right, that was the guy Tyrese had supposedly killed. Tyrese was on Talking Dead and he said that he didn't purposefully leave the guy alive, he gave it all he had. I think he was surprised the guy was alive.
Yes, it did look like poop, I can't imagine how awful the smell would be, the poop would probably be least offensive. I read some theories on whether zombies poop and the theory I like best is that they really don't eat that much, while they have this huge appetite to bite and devour things with their mouths, lots of it falls out of their mouths. As soon as the host dies, they lose interest and go off to devour someone else. The idea is that this virus uses their own rotting bodies as fuel, and that's what keeps them going not the food that they consume. There might have been poop left over from when they were still human though. (I have too much time on my hands.)
