White potato is a simple carb/sugar - therefore, for *some* dogs, it may lend itself to increased inflammation...but I feel that's more common w/ allergy dogs, not really tummy issue dogs. It's more difficult for dogs to digest more complex carbs, as compared to a simpler carb.
