I only meat and/or carbs for one meal each day, the rest is all veggies and fruit. However I am not counting eggs or seafood as meat.

I love quinoa. I sub that instead of rice. You can make it hot or cold in a salad. Toss into some tabbouli.

Sprouted seeds/grains are very good for you. I sprouted some lentils and used it in a salad. Lentils in general are very nutritious.

I've been using chickpea flour instead of regular flour for breading things, but not for baking desserts(don't eat them). I'ts just finely ground up raw chickpeas so you get extra protein and no carbs from the flour. I've used it to batter fish and chicken. You can fry or bake and still get a crispy texture and doesn't hold a lot of oil and stays crispy for a long time.

I hate kale also. LOL I was putting it in my smoothies for a long time but I just hate how it changes the texture of the smoothie and takes forever to wash. I am obsessive about cleaning kale bc of all the ruffles. I found a baby snail in one once. I don't want to eat a snail hiding in there. Also read there was a mad who ate a salad with a slug or something in it and it had carried some disease and he died.
