If he's picking it out anyways I don't see much need to do it gradually but yes, you do need to watch for upset and GI issues any time you change foods. Hopefully you will be one of the lucky ones and don't have the mess. (runny, mild runny smelly stool) If he does get a bit of runny stool just be sure that he is getting plenty of water to that he doesn't get dehydrated.
