I think Rick hasn't really shown his brutal side until this episode, and he wanted to keep in touch with his humanity for his son's sake, but in this episode, he felt he had to become brutal for his son's sake. I think they wanted to show how he's evolving and yet was still able to keep his humanity, for example when he talked to Daryl and called him his brother. I think Carl has felt like he was so much more brutal then his father that he thought of himself as a monster, but maybe they will both find the balance it takes to survive in this new world.

I think you are right about drugging the food and also kidnapping Beth, I'm really anxious to see how Carol will handle the situation. I didn't really like how Rick handled it, except the part of hiding the guns, I think only two of them should have gone in and if they didn't return by x time, the other two would know that they were being held captive. I can't believe we have to wait so long to see more.
In the flashbacks, they also talked about the watch-

We realized after the "sniper" kept missing that they weren't trying to shoot them, but more like herding them like cattle to the location they wanted them in.
When I saw the candle room I was thinking cult and ritual sacrifices but after seeing the pile of the bodies, I'm back to cannibals.
