Ham won't cause pancreatitis, the salt and other additive factors in a smoked ham would make them very thirsty though and may upset their tums a bit though.
A pound of fatty bacon would likely be an issue if fed regularly. Royz2 try a few different proteins, cook the meats, chop them up, she is getting older and I personally would just try something different everyday and keep a variety handy.
