I do it for mine. I didn't start out doing it as part of Kiko's grooming. She got an ear infection and the vet said she had too much hair in her ears and it didn't allow air flow. He plucked her ears (and gave her antibiotics) and showed me how to do it.
If your dog has really hairy ears, you might want to ask your vet about it.
