Are you pressing the shutter halfway first to lock the focus and exposure? Lots of times, that's all it takes to speed up the processing time for one picture. Press it halfway, hold, wait for the picture you want, then press it the rest of the way. It should be instant.
And hzlis, indoor action photos are going to be difficult no matter what camera you get. The only benefit to a Rebel is it has a setting where you can change your film speed (ISO). You can shoot pictures as high as 1,600 ISO, which might let you capture action in a well-lit gymnasium, but it won't do much in the average house with room lights.
If you want to stop action indoors, you might try using a flash and seeing how that works for you.
