There are some theories about this. Lots of ingredients in dog foods aren't easily digested by a dog's system, therefore, some foods come out the other end undigested or partially digested - making the poo voluminous, moist, mushy -- also, dogs can still smell the 'food' in the poo, which is why some dogs eat their own poo.

A drier, more crumbly poo is thought to contain just the waste products - hence, it's smaller, drier, doesn't smell like food. In other words, the food itself was better digested.
