Like immunizations, a moment of pain is worth that pound of prevention and I would definitely get the dew claws removed. As far as the tail docking, if you are not breeding registered dogs to the determined breed standard and they are all only pet quality, it does not seem as though the tails would be a issue anymore than that their ears be erect as standard states. So at that point it is an aesthetic issue and as per your preference.
