I like SWHouston's idea about leaving different variety of food out. Some can be picky eaters. Not sure what you're asking about how to leave hard food out for while you're not there...
Do you leave Sophie in an xpen or crate? If you do, just leave a bowl of food/water in the xpen/crate. Also.. if you want to feed her just twice a day, I'm assuming you're not coming back for lunch to check up on her? If so, are you using potty pads? She's really young so she'll be going potty often. You wouldn't want her to soil where she sleeps...
