My Rocco was young when I got him and I went throught the same thing. He didn't respond to any of the usual tactics (replace with toy, ignore, put hands away, "NO", etc.) The only thing that worked was a "time out". Not as a punishment, but so he could just calm himself down, much like a toddler. I'd give him the chance to respond to other attempts to stop, and if he just kept going (he'd get SO ramped up!), I'd calmly so "no", pick him up and slowly and carefully put him in his crate or behind a gated area. NO yelling, no shaming, no harsh discipline. After ONE minute, he was usually calm, and I'd sweetly tell him good boy, take him out and he'd be a new puppy. He was never there more than 2 minutes, although sometimes I had to repeat it. It worked like a charm. Some may say don't use the crate as a punishment, but it wasn't. He loved his crate and it was his safe place to gain control of himself. All pups are different, but this worked for me and took no more than 2 weeks or so.
