Judging by the low ash content of these foods, it sound like it is dehydrated meat. The Chicken & Ancestral Grain formula you mentioned is 30% protein and 6.80% ash, that is extremely low meaning it has chicken without bone.

These foods will be great for picky eating toy breeds because the website says the company uses vacuum infusion. That forces the fats into the middle of the kibble rather than the fat just dried on the outside. The dog can taste fat every time it chews a piece.

This looks like a cool line, Single Protein Cod with no egg, chicken, chicken fat or canola or flax.
