Have you asked your veterinarian about this behavior to see what he/she suggests?
How long did she have her UTI? If it went untreated for too long, it can cause scarring in the bladder, which would cause it to be unable to hold urine as a healthy bladder would...signs of this are peeing in strange positions and places...they have a hard time holding it.

Hello! It seems to be only in her sleep. I'm not sure if she actually gets up to and squats but I don't ever see her do it which leads me to believe she's peeing laying down. She had a "very mild but noticeable" UTI for about a week. I will read that article! thank you!! I will also take her to the vet
