Haha. Slight Freudian slip there when even thinking of dark meat. Yeah, you can easily tell where the slickness is from - can taste and feel the grease in the dark meat in your mouth. As a kid, I used to love the drumstick but as I got older, it became too "slick" tasting somehow. I don't mind grease in beef as much as I do fowl. Sure don't mind it in foie gras though! Wonder why it doesn't taste slick to me?
