Cooked up some machacado for dinner. Take half a small white onion and two serrano chiles, dice everything and throw it in a pan at medium heat with some olive oil. After they have cooked for a few minutes add a couple of ounces of shredded beef jerky (you can get it at Mexican markets under the name carne seca), cook everything for a couple of minutes, and then add 4-5 large eggs and scramble with everything. Serve it in flour tortillas to make a south/central Texas breakfast taco classic.
