Nice! I've never made pho at home. Don't you have to boil the bones for like 3 days or something? It's so cheap to eat it out, so I've never bothered. I actually like the fattier cuts, but I still feel like I'm pretty picky with my pho. It really comes down to the broth for me. And tendon.
