She was making hog's head cheese.
My grandma used to slaughter hogs. I remember she didnt waste any of it. My most vivid memory is the head in a big tub sittin on her kitchen floor. She also fried the skin and made cracklings. I loved her crackling corn bread.

I remember another incident where she bought about 75 pullet hens and she chopped there heads off with an ax and threw a big wash tub over them so they wouldn't flop all over the yard my job was to dip them into a big barrel of boiling water and pluck the feathers. It's a wonder I even like chicken now haha
