It sounds like Sophie didn't learn bite inhibition from her mother. Yorkie mothers are supposed to teach their puppies how to bite gently. Since her mother is no longer around, that responsibility has fallen on your shoulders. When she bites you hard, you should say "ouch!" or "no!" and withdraw your hand and turn away from her. You can also try substituting an appropriate chew toy to replace your hand. When she chews your finger gently, or gums your finger, you should praise her and give her a treat. It sounds like you're doing the right thing when you stop playing with her when she starts biting, but you have to stick with it.
