This time they came out very good! I think for this particular type, these are best eaten cold, like Korean glass noodle salad.
I used the noodles with baby carrots, ginger, scallions, chinese pickles (cucumber and turnip, which had some spiciness to it), shrimp, and to up the weird factor, a thousand year old duck egg. For the sauce, sushi vinegar (not too sour and a tiny bit sweet), bit of soy sauce, sesame oil. Also I reserved most of the broth from cooking the shrimp for a more shrimpy taste.
This made two servings, I finished up the rest today for lunch. Really healthy, and the only oil was from the sesame oil, which is supposed to be good for you anyway. The noodles are very substantial and I really felt like I was eating carb noodles. The texture feels good when eaten cold. Hot, not so much.
Give it a try! Omit the 1000 year old egg if you want, of course.
