You learn something new everyday, lol.

As soon as you slice, cut, etc the food begins to oxidize, meat or otherwise. Chewing your food is hardly comparable to commercially grinding, but technically speaking it is losing nutrients. However, ground meat does have more than cooked, but not as much as large chunks.
