I read a recipe that said to do that, so I did it, but I really don't know. It might be because otherwise you would have to bake it too long, a dehydrator is more efficient than the oven, the rack helps dry the meat faster. A convection oven is a lot like a dehydrator and if you use rack where air can circulate, it might be almost as fast as a dehydrator. How long did it take the liver in your dehydrator?
