Most people dehydrate the chicken breast because white meat has less fat, but I don't think the leg has that much fat, the thigh, on the other hand, has a lot of fat. I didn’t realize how much I had in common with chickens.

When I dehydrate meat, I keep a weeks’ worth in refrigerator and the rest in freezer. Dehydrated meats keep longer than fresh, but it's still best to refrigerate them. You can keep a day’s worth out of the refrigerator safely.
