It almost sounds neurological, as if she is having little seizures - when her brain is misfiring due to inflammation or injury or, even low blood sugar. Why don't you get a neurological consult and see what they say? Maybe she had a little stroke during surgery or shortly thereafter. I'd see a neuro and go from there. It could be so many things, though. Acting like she has ear mites could be from a headache or swelling of the brain and I'm sure your vet checked for mites when you took her in.
