Is the mess from eating really fast that scatters his food? Or just picking out pieces and laying them down, leaving them? If it is fast eating, you could buy him one of those special bowls engineered to force the dog to eat slowly. If he's picking out pieces and leaving them, changing to a food he likes all of or soaking and mixing his food into more like a pudding or gruel consistency should stop that.
