From my understanding, the study found the exact opposite. In the summary it says that the study found that the acidity of the gastric contents remained low for a longer time after the meal containing the higher protein content.

Furthermore, even if it found that the carbs lowered gastric acidity, the study is about protein vs. carbohydrates and the acidity they produce, it doesn't talk of raw meat protein vs. cooked meat protein, it even talks about the protein in carbs relating to acid.
