Congrats on your new baby, she's a doll!
Please research the signs and be aware of the very possible risk of hypoglycemia in such a young pup. She really is too young to be away from her mother and littermates right now so you need to be with her and very aware at all times for the next several weeks.
As for her coat, it is very much likely that you are seeing different stages of growth and not really an "undercoat." These pups and their coats change so much, so quickly, for a long time. =)
