So sick now of rich food and wanted something plain, honest, free of heavy spices or thick creams, sauces, gravies or anything. So, in homage to my British sister across the sea, I had a soft egg on a plain sliced down-the-middle baked potato, only salted, peppered and with some butter. Dipped some of the potato chunk in the geggy yolk and you know, it was yummy!!! Rich tasting, satisfying. Mmmmm. I loved it. Tibbe got a tiny bite. Thanks, Sally and Harry!
