You didn't notice the "en" at the end? That's "en" short for chicken. It's a chicken stuffed in a duck, stuffed in a turkey.

I love duck. It's a chinese staple. Peking duck, oh yum, what a treat! I had some duck today, but Thai style, and am having the leftovers in some leftover pho broth.
