I can't beat it like that! I don't have the heavy, heavy stainless steel with copper bottom very deep stock pot to cook the mixture in either. My sister paid a king's ransom for the huge, deep stock pot they cooked the fudge in. It was beautiful and so heavy you could barely lift it when empty. And she had a gas stove - I don't. Candy makers all seem to agree you can't really properly cook fine candy using electric as it gets too hot or not hot enough during the cooking. I don't really know if it's true but so many say it, they have made a believer out of me. I guess I'll just keep looking. I found a lovely little shop that described their Fantasy Fudge technique, etc., in Dallas but when I called to get exact directions, their phone was disconnected. Bah humbug!
