It is never a a good idea to withhold water from a dog. They regulate themselves and if she is drinking excessively, there is a reason. A very rough rule of thumb is approx one ounce per poound of body weight per day. This can vary a lot depending on HEALTH, wieght activity level, dryness of the air etc.
Honestly, I would not wait a few weeks to have her checked, if you took her to the vet, a simple blood and or urine test can help determine her levels. I had a diabetic dog and he started with the excessive thirst.
Please dont wait to take her to the vet, if she is diabetic, it is easy to treat but can be deadly if not treated.
It could be a simple uti also, so please have her checked.
