My boyfriend and I worked on cruise ships for 3 years - and while I never worked on Disney, he did for a few months. Being a minimal Disney fan, he said it was phenomenal what they did to their guests and making them feel welcomed. He would take a cruise there just for fun, so that's saying something! We do not have any kids.
There are quite a few "adult only" attractions on there, so I wouldn't worry about it. If you haven't done so already, check out cruisecritic. They have a plethora of first-hand information.
