The dog was giving warnings and clear signals left and right... he kept creating more tension, completely ignoring her signals until the only thing she could resort to was biting.
This is a dog that, to me, actually has great self control. She could have hurt him a LOT worse... she gave her warnings, told him to back away... the dog felt threatened and corned and had no other choice.
