I don't think it's pancreatitis or IBS if his stool is normal. I've only been told pumpkin if they have the runs to firm it up. Teegy had a bout of pancreatitis and was shooting blood out his backside. I wouldn't get too terribly worried, just keep an eye on him, do you give him a probiotic in his diet just to keep the intestines happy it may also soften his stool up a little if you are worried about it being too firm.
just make sure his diet is 80% meat 10% organs and 10% bones fish oil. My vet also told me when their tummy is upset fibre and veg is not good for them as it's hard for their system to digest. So if you are putting veg in the home diet puree it up so the dogs system doesn't have to work so hard to digest it. Adding a digestive enzyme may help too as it breaks the food down and gives the pancreas a break if you are worried about pancreatitis
