Peel mangoes and cut in half through seed. Discard kernel, but leave outer shell attached to fruit. Cut fruit into bite size slices. Bring water, sugar, vinegar, salt and food coloring to a boil. Cook until sugar dissolves. Pack fruit into sterilized jars. Pour cooled syrup over it.
