The Japanese way can be chewy. That was the first and only kind of octopus I had ever had prior to the Greek way. IMO the Greek way is far superior in yummy ness and very tender, not chewy at all. If you see it on the menu at a Mediterranean place try it! The kind I had yesterday was in a lemon sauce. It was very sour after a few pieces, as it was meant to be an appetizer. I had it as an entree so the sauce was a bit much toward the end.
