I will buy whichever meats do not contain sodium nitrates or nitrites
I really like to purchase organic chicken breasts from Central Market, bake it up and use that for my lunch meat. I slice it nice and thin and a couple breasts will last me for the week.
I marinate it over night in beer and seasonings (mostly garlic, salt, cheyenne pepper, lemon pepper) mmmm yummy with jack cheese or provalone.
