Mangos mmmm.... We have them here in abundance. I love to eat them with shoyu and vinegar. I love them green and ripe. Pickled mango is the BEST! I also eat them almost ripe...just cut a chunk off with the skin and crisscross cut them and turn them inside out.

I don't like them over ripe. Those are best for MANGO BREAD!!! I have a great recipe for that!
