In our family we eat all squashes: butter squash, yellow, etc. I make a delicious salad with roasted butter squash cubes, spinach leaves, soft goat cheese garnished with roasted pumpkin... yum!
The round squashes/zucchinis are perfect for baking them stuffed with minced meat and rice. Sour cream and tomato paste sauce goes on top! |
