I love this too, butter and brown sugar, just great!....I haven't tried it with the butternut but I do it with the acorn squash......I'll have to try yours!
The only way I've done summer squash is to quarter it length wise. Then I dip it in lightly whipped egg whit, roll it in a mixture of grated Parmasean cheese, S&R, and either dried bread crumbs or Panko crumbs. Spray lightly with oil then bake it at 400 for about 20 minutes or until lightly browned. Then I dip it in either pizza sauce or spag. sauce....Love it!
